Avocado Egg Salad

Ingredients

6 large eggs
1/2 red onion
1/4 cup dill pickle spears
2 tablespoons chives
2 tablespoons fresh dill
1 lemon
2 avocados
sea salt, to taste
ground black pepper, to taste
8 romaine or butter lettuce leaves, optional


How To Prepare

1.To hard boil eggs, I put eggs in a saucepan and cover with cold water by at least 1 inch.

2.On stovetop, bring to a boil, then turn off heat and cover with a fitted lid and allow the eggs to steam this way for 15 minutes.

3.Transfer to a bowl of ice water to stop the cooking, then peel.

4.To prepare the egg salad, peel and chop red onion. Chop dill pickles and chives. Mince dill. Juice lemon.

5.Chop hard boiled eggs and place them in a mixing bowl.

6.Peel avocados, remove the pit, and place in the bowl with eggs, then add onions, lemon juice, pickles, dill and chives.

7.Mash ingredients together well, then add a generous amount of sea salt and black pepper, to taste. Serve right away on lettuce or however you like! Enjoy!
