Sesame Ginger Chicken Salad

Ingredients

For the salad:
2 cups snow peas
1 red bell pepper
1 cucumber
4 green onions
1/2 bunch cilantro
1 cup shredded purple cabbage
1/2 cup shredded carrots
1 tablespoon toasted sesame seeds
1 pound cooked chicken


For the dressing:
1/2 inch fresh ginger
1/4 cup coconut aminos
1 tablespoon sesame oil
1 tablespoon rice vinegar
1/8 teaspoon red pepper flakes
sea salt, to taste
ground black pepper, to taste


How To Prepare

1.For the salad: Dice the snow peas, bell pepper, cucumber, green onions, and cilantro.

2.Combine all these ingredients, along with the shredded cabbage and carrots, in a large bowl. Toss toasted sesame seeds into salad.

3.Shred chicken and toss into salad.

4.For the dressing: Peel and grate the ginger. In a small bowl, whisk together all dressing ingredients. Season with sea salt and fresh ground black pepper, to taste.

5.Mix in dressing to your taste.
