Green Goddess Soup

Ingredients

1 bunch kale
3 carrots
1 onion
1 zucchini
3 stalks celery
1 head broccoli
1/2 pound asparagus, optional
1/8 head cabbage, optional
1 teaspoon minced garlic
8 cups chicken broth
9 ounces spinach
1/2 teaspoon cayenne pepper, plus more to taste


How To Prepare

1.Roughly chop kale. Peel and chop carrots and onion. Chop zucchini, celery, broccoli, asparagus, and cabbage.

2.Add all ingredients to a large soup pot and bring to a boil. Cover and simmer over medium-low heat for 30 minutes or until all vegetables are soft.

3.Puree soup with an immersion blender or in a blender or food processor until frothy and smooth. Sprinkle with additional pepper, to taste, and serve.
